Is there an ebelskiver recipe that does not include eggs or dairy? - ebelskiver pan substitute

My husband is allergic to both and fell into the pancake puff pan.

Here are some recipes (the pan is very powerful, is not it?)

Vegan Pear Pancakes
1 fixed pear, grated
1 C flour
2 tablespoons sugar (I used brown sugar)
2 tablespoons baking powder
Salt 1 / 4 teaspoon tea
1 C soy milk
2 tablespoons vegetable oil
1 teaspoon apple pie spice soup
1 / 4 teaspoon freshly grated nutmeg
1 / 2 teaspoon ground ginger (I ran out of fresh ginger in the freezer)

Mix the dry ingredients, then mix in the grated pear and a mixture of the liquid ingredients until just combined. Do not overmix as developing gluten and end with rubber pancake. Its fine when small groups of flour.
